I was throwing together an ice cream mix into the Vita-Mix for a quick whirl when I noticed something wasn't quite right. It was so thick, almost like pudding. Not sure of what happened, I put it in the fridge to get nice and cold before pouring into the Cuisinart. Pulled it out after an hour and knew there was no way it was going to churn. It was destined to be pudding, rich, thick dark chocolate pudding. It didnt take me too long to figure out that instead of putting in 1/4 tsp of xanthum gum, I put in a whole teaspoon. Oops, you say? Heaven's no. That was the best pudding we'd had in a long time. Especially since that's not something we usually can eat.
Here's the happy accident recipe:
1 and 1/2 cups canned coconut milk
1/2 cup So Delicious coconut milk (in the red box)
1 cup of sugar
1/2 cup cocoa powder
1 tsp bourbon vanilla
and 1 tsp xanthum gum
pour all the ingredients into a blender and give it a good whirl - until its all incorporated. Chill and serve.
