I was throwing together an ice cream mix into the Vita-Mix for a quick whirl when I noticed something wasn't quite right. It was so thick, almost like pudding. Not sure of what happened, I put it in the fridge to get nice and cold before pouring into the Cuisinart. Pulled it out after an hour and knew there was no way it was going to churn. It was destined to be pudding, rich, thick dark chocolate pudding. It didnt take me too long to figure out that instead of putting in 1/4 tsp of xanthum gum, I put in a whole teaspoon. Oops, you say? Heaven's no. That was the best pudding we'd had in a long time. Especially since that's not something we usually can eat.
Here's the happy accident recipe:
1 and 1/2 cups canned coconut milk
1/2 cup So Delicious coconut milk (in the red box)
1 cup of sugar
1/2 cup cocoa powder
1 tsp bourbon vanilla
and 1 tsp xanthum gum
pour all the ingredients into a blender and give it a good whirl - until its all incorporated. Chill and serve.

Breakfast GF/DF/SF/Vegan
Honestly, I never would have thought to find a recipe with demands such as ours on Allrecipes.com but on a whim, I checked. And what did I find? Perfection!

***I have found to have even better results making them into waffles. Make a double batch and throw them in the freezer for a quick breakfast or sandwich for lunch or after school snack. Whatever you need.
We tried and tried many a pancake and waffle recipe with sad results. But this one, my friends? Beats all. Husband Cake even likes them. Now that's sayin' something!
As for the 4 cupcakes, their favorite way to eat them are pbj style, with sliced bananas sandwiched in between and topped with maple syrup. Can't have pb? Try sunflower seed butter. A personal fav around here. We just call it pbj cause that's easier than saying sfsb&j, right? We like to whip up our own in the vita-mix.
Always grateful for the Vita-Mix! Can't say enough about how much I love that thing!
